Delicate aromatics of crisp apple and pears with a creamy palate and pearly bubbles.
Winemakers Notes
I knew I wanted to make a white sparkling in the ancestral method, but I didn’t know what grapes in the vineyard would do well. I sampled all the grapes in the David Girard vineyard until I found the right one, Roussanne. I had never seen a sparkling Roussanne before and what I thought would just be a fun project turned out to be something quite refined and has become one of my favorites.

Fermented with – Native yeasts
Aged - Bottle sur lees for 8 months
pH – 3.23
ABV - 12.1%
Additions – None
Method – Pet-Nat
