Electric fruits with mouth coating structure with notes of Bing cherry, anise and fresh herbs.
Winemakers Notes
I decided to make Grenache because I think it gets misrepresented a lot. The best way I can describe this wine, is like a rebellious teenager that had some rough patches that eventually turned out to be a strong, well-rounded adult. Before malolactic I wasn’t too sure about this wine but I let it do its thing and just tried not to disturb it.
Winemaking
Fermented with – Native yeasts
Aged in – Neutral French oak barrels for 10 months on gross lees without sulfur
pH – 3.54
ABV - 12.7%
Additions – 20 parts per million sulfur right before bottling
Method – 100% destemmed and Fermented 12 days on skins
Someone 21+ years of age needs to sign for package
*Due to environmental concerns and shipping costs, a minimum 4 bottle purchase is required.
