Bright red fruits with a soft finish of herbs and light spices. This is an age-able wine that is showing vibrant life out of the bottle right now.
Winemakers Notes
I wanted to make a Merlot that is a balanced version of what the grape can do. It’s a highly versatile grape that when it’s used right can have a full expression of bright fruits as well as complexity of flavors that play wistfully together.
Winemaking
Fermented with – Native yeasts
Aged in – Neutral French oak barrels for 11 months on gross lees without sulfur
pH – 3.40
ABV - 12.7%
Additions – 15 parts per million sulfur right before bottling
Method – De-stemmed and fermented on skins for 18 days then aged in neutral oak sans sulfur for 18 months.
Someone 21+ years of age needs to sign for package
