Tasting Notes

Nose of lavender and fresh pomegranates with bright fruits on the palate with a cracked peppery finish

Winemakers Notes

I’ve recently fallen for Counoise and was lucky enough to come across this special vineyard on a mountain top over the Mendocino valley. Usually counoise on valley floor can make simpler wine but the fruit from this strained mountain top soil makes something of concentration and specificity. This was my favorite ferment I’ve ever experienced and it was my comfort place during harvest.

Winemaking

Fermented with – Native yeasts
Aged in – Neutral French oak barrels for 12 months on gross lees without sulfur
pH – 3.58
ABV - 13.5%
Additions – 18 parts per million sulfur right before bottling
Method – 100% destemmed and fermented 18 days on skins
