Energetic mousse with warm cream-sickle and pomegranate notes. Perfect for a porch on a sunset evening. Also makes for a great mimosa replacement.
Winemakers Notes
This was another fun experiment that turned into a fresh and lively wine that works as a porch pounder. Grenache brings an abundance of fruit but I tried to balance it out by doing extended lease aging. (31 months!). Not often will an ancestral wine be aged this long but I took a chance on it and it paid off.
Wine-making
Fermented with – Champagne yeasts
Aged - Bottle sur lees for 31 months
pH – 3.21
ABV - 12.1%
Additions – None
Method –Ancestral, fermentation with riddling and disgorgement
Disgorgement Date - April 28th 2023
Someone 21+ years of age needs to sign for package
